Bananza!

My love for bananas borders on obsessive. Especially since Ive been told by my trainer and naturopath to limit them. You see bananas are my go to. I love them in oats, dipped in chocolate, frozen, whipped into banana ice cream or just plain. I love them! Now the reason Im not supposed to have them is because there are days when I would have 2-3 bananas! Bananas have quite a bit of sugar in them so 2-3 is not good for someone like me that doesn’t just have a sweet tooth but sweet teeth! My banana loving ways will not end however, I’ve just got to limit myself. Now bananas are amazing in breads, cookies, muffins, scones etc. So I’ve got quite the gem(s) for you! Not only one banana chocolate chip muffin but TWO!

Banana Almond choco lovelies. Gluten,dairy and soy free.

Preheat your oven to 350F.

  • 3 medium bananas.Mashed well.
  • 1/4 cup almond butter/peanut butter. I used almond but when you mix peanut butter and bananas you basically have a delicacy so go forth and use whatchyah feel is right!
  • 1/3 cup turbinado sugar OR cane sugar.
  • 1 egg white
  • 1 tsp vanilla
  • 1 1/2 cups oat flour ( you can just process old fashioned oats in a food processor instead of buying oat flour)
  • 1/4 tsp salt
  • 1 tsp baking soda, 1 tsp baking powder
  • 1/2 cup dark choco (75% and up). If you only have regular milk chips then no need to shed any tears. Use whatever chocolate you have but keep in mind milk chocolate will make this recipe no longer dairy free.
  • 1/3 cup sliced almonds.

Directions:

1)mix your wet ingredients (inclusive of sugar) in a large bowl. (Mashed naners, almond/peanut butter, egg white, vanilla and sugar.mix mix mix! If you cant mash the banana well enough and there are still chunks have no fear. This method also tastes heavenly.

2) Mix dry in a separate bowl. Flour,baking powder,baking soda,salt. Now incorporate wet to dry and mix mix mix! Finally add your chopped dark chocolate and almond slivers/chunks. I added the 1/2 cup dark choco and then added another handful JUSSTTTTTT for good measure! hah!

3) Place into lined/oiled muffin tin about 3/4 of the way full and bake for 18-20 minutes. Bon Appetit! Makes 10-12

Recipe TWO!

Buckwheat Banana Breakfast Bites. Vegan.Wheat free.Dairy Free.Soy free. But still amazing.

I know what your thinking with this one. This banana muffin is going to be no fun because its lacking most things that make muffins amazing. Sugar,Butter,white flour and loads of milk chocolate. Do you think me and the chiquita banana model would lead you astray? No!

Ingredients:

  • 1 cup Almond milk (vanilla or regular) +1 tsp lemon juice.
  • 2 flax eggs.(2 TBS ground flax + 6 TBS warm water)
  • 3 RIPPEEEE bananas mashed. Approx 1 1/2 cups
  • 1 tsp vanilla extract
  • 2 cups buckwheat flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup carob chips/dark chocolate chunks or chips.
Directions:
-Preheat oven to 350F.
-Then Mix your flax eggs and set aside. They will gelatinize in approximately 5 minutes, and look sort of egg like in consistency.
-Now mix together your almond milk and lemon juice and set aside to curdle it a bit. Approx. 5 minutes.
– In a large bowl mix together the flour,baking powder,baking soda and salt
-In a separate bowl mix together the mashed banana, flax eggs, vanilla and milk/lemon juice mixture.
-Add wet to dry and then mix in your chocolate of choice.
-Place in the oven for 18-20 minutes. I made two batches of these and for some reason one batch took 15 minutes and the next batch took 25. Just keep checking with a toothpick until you think there ready. Worst case scenario is that the chocolate and banana are a bit soft and you have to lick it off your fingers. Worse things have happened.

Also. A quick tip for ALWAYS having bananas on hand…and in my domain we ALWAYS have bananas…is too buy enough to feed an army and then once there ripe ( and i’m talkin RIPPEEEEEE. Not yellow but a deeep brown) throw them in the freezer and you too will ALWAYS have bananas on hand. When your ready to make your newest banana concoction just remove them from the freezer the night before and place them in the fridge to thaw out….I have put them in the microwave because I forgot to thaw them out and then panicked. That method ALSO works!
