The coolest treat made cooler.

Today is my day off! ( of several seeing as how I love to give my shifts away). Anyways today is a day of recipe sharing, pug grooming ( We have to brush him every day because the summer heat makes him shed like a son of a b), bike riding, running and having coffee with friends later on. 

On the home front,Ryan and I started mountain biking last year and with the purchase of our new truck we are now able to go bike riding where we want , instead of riding our bikes to where we wanted to go sans truck, and then being too tired to continue! Things have changed with our bikes since we got clipless pedals! I don’t know if ive ever sworn so much on a bike in my life. Bike riding is supposed to be leisurely, challenging when you want it to be- but fun. Most importantly- fun! Anyways basically clipless pedals enable the rider to be clipped into the pedal so that you can not only push down as you can with a regular shoe, but also pull up, making the rider more efficient ( apparently). You’ve all most likely seen these clipless pedals on road bikes, but you can still put them on your mountain bike and pray to god you don’t come across an uneven fallen branch or unsteady rock. 

Ry got them first and banged himself up a bit, and then me being as competitive as I am, decided it would be a good idea for me to outride him and get them too. Long story short I now want to hurl my bike into the lake and be done with it! Im having a helluva time getting out which makes breaking on the bike the scariest thing in the world!

Hopefully by next post it’ll all be easy breezy lemon squeezy and I wont need training wheels. The last fall earlier today indicated a strong need for a treat. Otherwise, whats the point in working so hard without a reward!

Enter: Sneaky treats.

Again if you don’t like avocado, don’t worry, you wont ever notice there is avocado in the following recipes as they’re not reminiscent of avocado at all!

Key Lime cheesecake pudding:

Serves 2

  • 1 avocado
  • 1/2 cup milk ( vanilla almond milk preferably)
  • 1 tsp vanilla
  • 1 lime, zest and juice
  • 2 TBL cane sugar
  • pinch salt


Blend! and let chill in fridge for a half hour…if you can. I didn’t have the willpower and it was still delicious. 

Now what comes next is truly delicious and will definitely be a summer staple in our house.

Key lime cheesecake POPS! That’s right! I had the genius to pour them into my brand new pop molds and voila, behold a creamy dreamy popsicle!

I gave Ryan these super awesome spaceship popsicle molds for one of his birthday gifts…even though we all know he would never take the time to make popsicles… and it truly has been the gift that keeps on giving! Also, the tagline for the popsicle box was ” a cool treat made even cooler”…uhm sold!

So for the spaceship pops, firstly GO AND BUY SPACESHIP POPSICLE MOLDS, and then use the above ingredients for the pudding and pour into the molds. Freeze until set and enjoy! 

and if you find yourself pretending to fly the popsicle around the house and make spaceship liftoff sounds, that is fully encouraged.

salad, schmalad

Ok so I realize that salads are pretty bah humbug to some people. To others, they’re pretty glorious. To moi, a salad CAN be great, but naturally I tend to be very very very very fussy and thus the salad has to be juuuuuust so or I wont partake!

I absolutely hate cold grain salads. You name it, I will probably hate it. I even attempted a cold salad smothered in glorious bits of goat and feta cheese and could barely keep it down. I can, however, handle a caesar salad smothered in dressing, croutons and copious amounts of parmesan cheese!

Anyways, me not eating vegetables after the wedding was becoming a habit and we need our veggies! I was literally gagging at raw vegetables and could only handle eating them baked in fry like shapes & drowned in ketchup ( note this is still my favourite way to consume veggies!). I literally ate so many raw vegetables during my cleanse prior to the wedding that I needed a break- but break time is over! So today I give you a super dressing thats reminiscent of a vinaigrette caesar and for some reason has a hint of cooked bacon in it. I could be imagining this, but I rarely give health food a thumbs up unless its divine….speaking of that, it sort of bothers me when foodie bloggers suggest that there kale chips taste like “ketchup” or “ripple sour cream n’ onion”. Your not fooling anyone! Especially a chip connoisseur like me!

Okay so here’s the dressing that will help you gag down that salad if thats the last thing you want, but know you need. Also please do yourself a favour and mix in some homemade or boxed croutons and some shredded parmesan or whatever cheese strikes your fancy. Who knows, you may need another bowl!

Britt’s awesome dressing:

  • 2 TBL EVOO
  • 2 TBL grapeseed oil ( or extra olive oil)
  • 2 TBL lemon juice
  • 1 TBL tamari ( or soy sauce but I like to use Tamari because its wheat free)
  • 2 cloves garlic finely chopped
  • dash of herbamare or salt
  • dash pepper
puree in mini food processor OR if your too lazy to wash the mini food processor when your done…simply take your ingredients and put them all in a mini tupperware. CLOSE tupperware and shake vigorously! You can enjoy immediately, but if you have time, leave the dressing for a half hour + so that the flavours can meld together. Delicious! Tastes even better the next day.

Caramel Corn….need I say more?

Okay so no more trips, no more weddings and no more graduations….at least for a while for the trips and the graduations..hah!

ALOT has happened which I will fill you in on over time. The wedding will be several posts but for now lets talk about food. Basically my wedding regime in diet and exercise consisted of weights 3-4x week, cardio 2-3x a week and a pretty ‘clean’ diet which didn’t include cheese or bread. I am crazy enough to not eat bread for four months and I regret this decision! I was basically in tears having my first slice the day after the wedding – smothered in sugary peanut butter/ Nutella ( I went a tad overboard).

Nevertheless, AFTER the wedding I’ve been enjoying whatever I want, whenever I want it. For example its not uncommon to see me throw a handful of homemade Glosettes into a bowl of sugary cereal in the morning. I used to have oats and egg whites every single morning and now the world is my oyster! Cereal, pancakes, muffins etc etc etc!!! Im taking this food ‘honeymoon’ until I feel like getting back on track again. As you can probably notice I tend to have an all or nothing mentality and right now Im feeling like a few more treats are in order.

Now when I was telling Ryan about my exercise and nutrition hiatus, he said he hadn’t noticed. Mind you, he wouldn’t noticed if I got a G.I Jane haircut either. Moreover, even though I took a break from blogging… I did not take a break from recipe creating! It’s really the only thing that calmed me down when the wedding was in full boar.

I will still trying to feed people a day before the wedding. I love feeding people. yessir.

Okay so I may or may have not mentioned that I don’t really eat corn. I may have read too many books or seen too many movies where they give corn a bad rap. But today I believe in living life in moderation and that popcorn is actually quite a healthy snack if you do it up right. Let me show you how.

disclaimer: you will need a popcorn maker for this or buy some bags of natural unsalted/unbuttered popcorn bags. Also note that you wont be able to stop eating this. Literally wont be able to. 

Caramel Corn, FloydsKitchen style:

  • Organic popping kernels I didn’t measure but It was enough to fill a big bowl- I’d say 6-7 cups or so. ( remember that the less popcorn you have, the sweeter it will be, which in my books is an awesome thing)
  • Vanilla extract 1/2 tsp
  • butter ( unsalted) 2 TBS
  • honey 2 TBS
Pop the corn and let cool in the bowl while you warm the honey,vanilla and butter in a pot over medium heat. Once fully melted pour over the popcorn, toss the mixture, and let sit. THIS WILL BE A CHALLENGE. Try to busy yourself with a task while NOT eating the popcorn……..
I have made this way too many times this week and have failed at this challenge but I promise if you can wait it’ll turn out better!
Once popcorn is cool ( about 20ish minutes) feel free to devour! Also remember that noone will judge you if you find yourself scraping the bottom of the bowl with the last popcorn kernels.


Coconut bliss brown rice pudding.

Brown rice pudding is a dream. I can’t say enough about my newly discovered treat. 

This baby was dreamed up after a dinner I had recently. I rarely ever order dessert at restaurant- though I always always always want it- no matter how full I am. Nonetheless, I always look at the menu to check it out. I noticed they had rice pudding and realized I had never tried. Naturally it was made with heavy cream. WHY is everything in North American laden with cream! I also find that restaurants never have healthier options in the mix either which is okay because it helps me brainstorm amazing ideas that I can share with you.

Behold the dreamiest/creamiest rice puddin’ ever!I

I’ve been eating this pretty much non-stop for breakfast but it easily doubles as a dessert.

What you’ll need: ( serves 4)

  • 1 cup brown basmati rice
  • 2 cups water
  • 1 cup vanilla almond milk
  • 1 can full fat coconut milk ( don’t kid yourself with the ‘lite’)
  • 1/2 tsp salt
  • cinnamon stick / 1 tsp cinnamon
  • 1/4 tsp cardamom
  • 1 inch piece fresh ginger or dash of ginger
  • handful of raisins or 1/4 cup- adjust to your liking
  • 2 heaping tablespoons cane sugar or brown sugar 
  • 1/2 cup pecans/walnuts/almond/ whatever nut you prefer. ( can omit)


Bring the rice along with the water,almond milk, salt, ginger, cardamom and cinnamon to a boil. Reduce heat to low and cook until rice is done ( approximately 35-40 minutes)

Once rice is ready pour in the coconut milk along with the sugar and raisins. Continue to simmer on low until you reach the consistency you like. I simmered mine for approximately 20 minutes this morning because I was antsy for breakfast but would recommend a longer simmering period to reach maximum creamy dreaminess.

NOTE: If you DO tend to sprint to the kitchen to inhale breakfast immediately like myself, keep in mind that this breakfast takes approximately 1 hour + until its ready. What I do is make eggs or a smoothie as an ‘appetizer’ and then wait for this. Good things definitely come to those who wait.

What I love Wednesday…a new segment

A new recipe will not be on the forefront today because…peanut butter cookie dough spread turned out beanier than it should have ( I thought itd be a good idea to get some protein in the mix and thus used chickpeas as a base = don’t try this at home kids. Last night’s Fava bean flop and yesterday morning cake batter oats turned out to also be not delicious enough to share. So, I’m moving on to what I love and eventually what you most likely will too – Do you ever have that moment when somebody mentions something or wears something or eats something etc etc and suddenly you NEED to have it too.


a) Whenever Ryan is eating or drinking something…even if I don’t like it or am not hungry nor thirsty I MUST try it.

b) Whenever my friends mention something they like or need i have to check it out for myself- take bright pants for example. I wasn’t too interested until I seen a girl at the gym wearing bright pink pants and now suddenly I will beg, borrow or steal to get myself a pair.

Moving on to things I love or can’t love without:


I use this multiple times a day and could not live without it. In fact i’m not sure what I did before it!

2) Lululemon run pants:

I wear these everyday. They don’t become loose or soggy in the bum and although they are extremely tight they don’t feel hot the way lulu pants do.

c) Long spoons:

Ryan bugs me about my long spoon obsession but for some reason they just make me happy. I love using them and can’t quite explain why. You must get yourself one and feel the difference!

d) Crock pot oats:

Quick recipe. Pull out your crockpot and get a glass measuring unit that looks like this


The measuring cup needs to hold about 4 cups or so because in the glass measuring cup you are going to put 1/4 cup steel cut oats combined with 1/2 cup vanilla almond milk and 1 cup of water + a dash of salt and cinnamon. place the glass measuring cup in the crockpot and fill the crockpot with enough water to cover half of the glass measuring unit. You are effectively creating a water bath for the glass measuring unit. This method makes it to the oats don’t get all crusty and hard and stuck to the crockpot which equals no cleaning! Switch the crockpot on low for 8 hours and when you wake up in the morning you will have the creamiest bowl of oats in the world!!

d) Earth’s best sesame street ‘ on the go o’s ‘

I was feeding these to my niece in Calgary the other weekend when I decided to eat a handful of these as well to show her how good they were. Well she wasn’t so sure but I DEFINITELY WAS. HOLY HOLY HOLY! I have a problem with loving cereal too much and basically spent a year eating cereal every breakfast for about 3 years. ( I know I know I know) . I choose to stay away from traditional Cheerios because there is some pretty bizarre ingredients in the traditional ones but alas, earth’s best is my new snacking companion. I could NOT stop for the life of me which probably means I shouldn’t have them in the house! Anyways the ingredients blow the other Cheerios out of the water in comparison. These Cheerios are natural and dare I say much much much better tasting!

e) Arrested Development.

I was listening to the radio the other day (Cosmo radio which is admittedly another new obsession due to the ‘wake up with Taylor’ segment in the morning. Taylor and Kenny are the most hilarious duo I have ever heard on the radio! Anyways They were talking about arrested development and how it just came on Netflix and how hilarious it is. They did mention that it’s funny because its all inside jokes and sarcasm but that you must watch from the beginning or else don’t bother. Well I did bother and I can’t stop watching. Michael Cera is hilarious and I can’t believe I missed out on this show for so long!

f) Kopali’s dark chocolate covered mulberry’s.

one of my best friends introduced me to the Mulberry this winter and I love them as much as raisins and we all know how much I love raisins so that’s really saying something. Then a terrible/amazing depending on how you look at it… thing happened. I went to Whole Foods and discovered DARK CHOCOLATE covered mulberry’s. Now let me ask you this…What’s better than a mulberry? Answer: A dark choco covered mulberry.

The problem is that there small and easily snackable and don’t even think about having the bag for moree than a day.

Crepe’s 3 ways. ( Also not annoyingly difficult)

This recipe was the brainchild of a much needed nutella banana crepe. Sometimes you just need a crepe. Most of the time,however, you don’t /I don’t want to bother with making the crepe. Before today, crepes used to make me feel pissed off that out of the whole batch I would have one that had actually worked- out of the whole batch!

Ryan’s been bugging me to make crepe’s since forever and although I have attempted them many times, and failed many many times, I had given up all hope….UNTIL….the spelt buckwheat crepe revival. I never use white flour anyway ( which was what I had been making crepes with in the past), so I was taking it as a sign that I had to use a healthier flour and hope to jesus that it worked. There are zillions of buckwheat crepe recipes but I have never been successful with solely using buckwheat, and I knew that spelt and buckwheat work well together in other baked goods. Well I tell you….these were magnificent! First try and all. No, you do not need a cast iron pan or fancy pants crepe making pan. Non-stick works best or if you don’t have a non stick pan, simply rub a bit of butter/oil on the pan to ensure it doesn’t stick like the dickens!

Also, funny enough my recipe matches another girl’s from ‘Cookie and Kate’ almost perfectly so please go and look at her beautiful photos!

moving on…

Line up the troops: This serving makes 6 small crepes/ 2 people.

  • 1/2 cup whole spelt flour
  • 1/4 cup buckwheat flour
  • 2 eggs, room temperature 
  • 2 tsp cane sugar
  • 1 tsp cinnamon
  • pinch nutmeg
  • pinch salt
  •  3/4 cup + 2 TBL almond milk (vanilla preferably), room temperature
  • 1 TBL butter/ earth balance, melted

Optional add in’s once completed:

  • banana ( have sliced and ready to go) and Nutella ( I use Justin’s chocolate hazelnut spread which is sans dairy)
  • Eggs + monterey jack/ goat/ gouda with shallot and mushrooms ( UNBELIEVABLE)
  • Jam + peanut butter


Heat a large non stick pan on medium heat. Grab a food processor/ blender and mix together the dry ingredients. Now process/blend the wet ingredients in the same batch. Batter should be nearly liquid. Grab a quarter cup measuring cup and scoop out 1/4 cup of the batter. Place the 1/4 cup of batter in the middle of the pan and quickly rotate pan in a circle until batter has spread out into the shape of a crepe. THIS STEP is crucial. If you wait too long the crepe wont work. Finally wait approximately 1 minute ( a little less) until the crepes edges have lifted slightly and then flip with a spatula. The crepe should not stick at all if your pan has been greased properly.

Finally once all of the crepe’s have been created, assemble with the above suggestions and enjoy!! These will also keep wonderfully in the fridge and can either be eaten cold or heated up on the pan again. These truly are a vehicle for bananas and chocolate- and that is just fine with me.


New York City & Georgia!

Okay so for half of the trip I kept calling NYC the big easy. It is NOT the big easy and laughed for about an hour at this. Its just funny calling a place the big easy. Anyways, New York was unbelievable and usually I don’t share the whereabouts of every moment of my little family but these things you WILL need to know so that you can go and pack your bags immediately and head on over.

Hotels aren’t cheap….AT ALL….but good news is that food is. I usually travel places that have amazing food ( or what I deem to be amazing) and whatever it is you want in NY you can have it- at any time and at any price! 

Now if your heading over take your budget and then double or triple it because your going to spend alot more than you think! Which is fine because money was made to spent. Here’s the things we did and what I would suggest you to do too!

-Go to a knicks game and depending on your seats bring binoculars or a camera with amazing zoom so you can celebrity hunt! We seen Ricky Martin, Ben stiller, Turtle from Entourage, Kevin James from King of Queens and one of the ladies from the Help. Not toooo bad for an afternoon of celeb hunting if you ask me! Ryan and I don’t follow basketball but by the end of the game we wanted to live,breathe and die for the team. The energy is so intense!!!Image

– Go to a broadway show. We seen ‘Once’ and it was quite good and im sure they all are but its really quite exciting and the tickets can be much more affordable than the Knicks if you have to choose one event.

-Rent bikes in Central Park and again (celeb hunt) and have lunch at Le Pain Quotidien which (amazingly enough) serves gluten free and dairy free items.

– Go to Times Square. We did go but its an absolute zoo and didn’t stay for very long at all. ( I did pick up ANOTHER pair of runners) but we went for broadway. Also there is a Toys’ R’ Us in times square with a real ferris wheel that children can ride which is worth the trip if you have kids! Sidenote : You’ll see many many many many many people wearing awesome bright coloured runners in NY and I was wondering why Canada usually just sells boring white runners. We popped into Footlocker to buy Ryan some socks and here is where I seen the great wall!Image

So even though i’m unemployed and just bought a new pair of runners ( I tried jazzing them up with neon pink laces!), i absolutely had to get a pink/purple/yellow pair of new balance 890’s! yay!

Also must do’s are SOHO for shopping and Greenwich for eating. New York is open 24 hours a day which means that you can pretty much do whatever you want, whenever you want which was a bit strange seeing as how Summerland,B.C rolls up the sidewalks at about 4:30. I typically go to bed extremely early (like 9-10) and in New York since everything is open all the time and people are out and about all the time we didnt end up going to bed until 2 or 3. We also woke up very early ( like 7:30 am) to get our day started. We had 4 days and managed to see absolutely everything on our list ( Brooklyn Bridge, Carries apt. from sex and the city, wall street, NY times etc) all within that time- BUT at a very fast pace.

Now that i’ve saved the best for last….This shop does need a whole post to itself…but enter- LULA’S SWEET APOTHECARY. Ryan had to pick my jaw up from the ground when we arrived because I was so in awe at this beautiful shop. It’s a tiny hole in the wall serving gluten free, dairy free, soy free and nut free ice cream ( depending on what you want). Here’s the kicker though- the ice cream rivals Ben & Jerry’s. We went back 3x which is funny because its COMPLETELY out of the way of any subway stop but I was hook line and sinker. In our stay I tried root beer float, peanut butter explosion, oreo cream, oatmeal raisin cookie (HOLY SHIT), and cake batter soft serve. I also tested about three thousand more flavours just to be certain of my choice. Nonetheless, now that I’ve experienced an ice cream that is dairy free and ISN’T soy or coconut i’m pretty well determined to have a show like this of my own. I can’t say enough about Lula’s except to book your ticket now and sprint. It also helps that there open till like midnight. ( They are closed on Monday’s however which pissed me off-haha!)

There is much more to be said about the city but it really is amazing and if you love food or love pretty much anything you WILL find it there. Everything you could ever want or need or wish for is right there!

Next stop was Savannah Georgia ( Home to the Forest Gump movie) and was part of a trip that Ryan won with work. I wasn’t sure what to expect …until now- Fried chicken and southern accents. The southern accent is definitely contagious, as are the homes. The homes are absolutely gorgeous. That is one thing Georgia has going for it. They have the most beautiful southern homes- most of them decorated with antiques which adds to the effect. Image

I had a hell of a time finding anything that wasn’t deep fried but it was nice to be in an area where the temperature was about 25 and you could just lie by the pool! By the time we got there we were pretty exhausted from New York and mostly spent our days at the pool. We were introduced to Pineapple Mojitos which we fully enjoyed- and I’ll be trying to recreate for our wedding drink!

Well, we have absolutely no food in the fridge this morning so I’m off to the gym and the grocer and will post something delicious tomorrow. We’ve been so spoiled with eating out that I’m not sure where to start!

Top of the Morning Muffins!

Whenever I go to a coffee shop it basically takes everything in my body to not buy a muffin. Coffee + muffin=happiness. Coffee + sugar disguised cake at 9am=sugar crash and upset hips. That doesn’t mean that muffins DONT get consumed….they just get healthified. My muffins should also be sold for $4.50 each for all the health benefits they provide! 

The ingredient list is lengthy. I wont deny that. But the nice thing about this recipe is that since I made it up on the spot so can you. Hate raisins? Omit completely and sub in cranberries or nuts. This recipe is now your recipe! Think of it as a formula for an awesome muffin that can be eaten every single day. Basically the muffin formula simply implies that if you don’t have flax seed sub something else seedy in-like Chia. 

Okay ready. Deep breath. Also the photo is missing two muffins because I had to taste test…and then quality test.hah!

Top of the morning muffins- or ‘Every single day I can have my cake and eat it too muffins’

The troops:

  • 1/2 cup buckwheat flour
  • 1 tbs flax
  • 1/4 cup unsweetened shredded coconut
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • pinch nutmeg, pinch cloves (optional)
  • 1/4 tsp salt
  • 1/4 cup raisins
  • 1/4 cup dark choco ( I used 1/2 cup hah!)
  • 1/2 cup rolled oats
  • 3 tbsp brown sugar
  • 1/2 cup grated carrot,1/2 cup grated beet, 1/2 cup grated apple
  • 1/2 ripe banana
  • 1/4 cup almond milk (keep the milk out)
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract

Preheat oven to 375F and grease a muffin tin/ insert liners. Grate the beets/carrot/carrot. Mix the dry ingredients well and then in a separate bowl mix the wet ingredients. Add the grated ingredients to the wet and finally add the dry to the wet. The batter will be thick but NOT dry, if you find that yours is quite dry simply add a few more dashes of milk until its moist. Pour into muffin tin and bake for 24 minutes. Let sit in muffin tin for 1 minute and then pop out and let cool.


Turkey Burgers in under 10 minutes.

I spend about a 1/4 of my day scouring blogs, pinterest and tastespotting looking for fun and interesting new recipes to try. Most of the time its fun until there are those days that there are too many amazing recipes and then I get anxiety thinking I need to make them all immediately! ( Maybe that’s just me?)

As we gear up for NYC on saturday (yay!) Im trying to buy less groceries so we don’t have to freeze an entire fridge full….and just use what we have. Floyd and I were in the mood for turkey burgers, so I looked up several thousand recipes and knew that each and every one would ask me to break out more than one bowl, a grater and measuring spoons. That was too much to ask. On this blog, you’ll probably notice that many of the recipes are NOT labour intensive. I have a hard time relishing in the ‘slow cooking’ method because what tends to happen is that i’ve eaten my weight in snacks by the time dinner is ready. So as you can see dinner needs to be fast!!

So here’s what I came up with..and its pretty damn good if I do say so myself. One bowl. No measuring spoons nor measuring cups and voila- a burger patty that doesn’t require 6000 steps.

The under 10 Turkey Burger ( Probably not going to win best patty of the year but will definitely satisfy the burger craving)

  • 1 package ground turkey thigh/breast ( Im not sure how many kg’s my pack was but it was roughly three handfuls or a single pack/ NOT a family pack) ( again go with what you have)
  • 1 egg ( room temperature)
  • handful or two of bread crumbs ( opt for wheat free if wheat makes your stomach uncomfortable)
  • spices galore. (Again go with what you have. I chose a mixture of dried garlic, onion, paprika and cayenne.No measuring needed just sprinkle it in)


MIX MIX MIX! I just used a fork and smashed it all together. Now preheat a non stick pan on medium heat. Get your hands wet and mold burger patties in your hands. No need to have a perfect disk here. Plop them on the pan and grill on each side for approximately 5 minutes or until no pink is showing. Done and done!

—> The one slow cooking method you can use…and which I strongly advise is to chop some onions thinly into moon shapes and fry on very low heat for about 45 minutes or until caramelized. You can store the extras in the fridge for the week so you can always have them handy for sandwiches, THESE turkey burgers etc.

Makes about 5 smaller patties or enough for 2 people.

Banana Granola….Right on the money!

Before we get to the guest of honour (banana granola!)…I just wanted to tell you about my weekend. Friday night was me and Floyd watching Melancholia with Kirsten Dunst. The movie is quite good but equally as odd. Saturday consisted of a bit of work and a bit of running in my new mizuno runners. I have to go on a tangent now. I’ve switched from my beloved Asics to Mizuno simply because Mizuno has better and more bright colors and now my feet are sore! I just bought them on Thursday and can take them back because I haven’t used them outdoors but am hoping that I was just breaking them in and thats why my feet are sore! I typically wear the Asics Cumulus which generally only come in boring white so I thought that because I’m a neutral runner that I could switch to any neutral shoe. So with the help of Penticton’s local running store I was able to track down some bright purple and pink Mizuno runners which for some reason make working out that much better. Anyways, my feet are actually horribly sore today and I only ran for ten minutes! Blah!

Sunday= snowboarding which was actually probably the best day of the year ( at least for me). There was buckets of snow everywhere, and as a new snowboarder that meant that falling wouldn’t be so painful. Funny thing is i got whiplash from falling on my head so hard and now can barely lift my neck up. 23 years old and I feel like an old woman with foot soreness and neck/back pains! Im going to the walk-in today to make sure everything is in order and that I can still continue with my scheduled workouts. We finished the day off with the perfect turkey burgers-recipe to share tomorrow.

Now to the most important item of the day…Granola.

The problem with many boxed granola’s is that they’re basically candy bars in oat form. Most have more grams of sugar per serving than a chocolate bar or can of pop. That’s why I labour for hours and hours and hours for you with the oven on…taste testing granola batches. ( Worse things have happened Im sure).

Anyways its not that easy making granola taste awesome without using a cup of oil/maple syrup/honey. Nothing is wrong with either of those items but put them all together and mix them with oats and your begging to get diabetes!

This granola features banana as the natural sweetener with only a touch of all natural brown sugar which works just fine for me. As a person with not only a sweet tooth- but sweet teeth…this granola is great.

Banana Granola:

  • 2 1/2 cups oats
  • 1/4 cup hemp seeds/ quinoa (uncooked)
  • 3 tablespoons brown sugar ( all natural)
  • 1/2 cup ripe ripe ripe bananas! ( If they don’t have brown spots don’t bother)
  • 1/2 cup unsweetened shredded coconut
  • 1 tablespoon coconut oil ( or other light tasting oil)
  • 1/4 teaspoon sea salt (rounded)
  • 1/2 teaspoon cinnamon
  • 1/4 cup raisins


Preheat oven to 300F. Line a cookie sheet with parchment paper and set aside.

Mix dry ingredients (including raisins) in one bowl and then the wet ingredients in a separate bowl. Finally mix these together and pour onto lined baking sheet. Place in the oven for 35-40 minutes. Granola is ready when it is golden brown and fragrant.Turn oven off and prop door open to ensure the granola gets crunchy!

Feel free to add any nuts or other dried fruits to the mix. I ended up adding some walnuts just for good measure.
